Categorize and filter conversations by topic

Let teams create conversation categories such as Refunds, Billing, and API, and use AI to assign relevant categories. Make the inbox filterable by category so teammates can handle similar requests together, reduce context switching, and see what kinds of requests are waiting. Teammates should be able to correct the assigned categories.
