It would be cool to be able to do markdown formatting (or just any type of formatting) in issue descriptions and comments.

Would be great if markdown formatting also worked in Changlog/Updates. I create release notes, which I end up copy/pasting a lot of places. It usually has a lot of bullet points, and having to manually fix bullet points because UserJot has a built-in bullet point formatter is a real friction.
Maybe at least if I paste text with text like
- line 1
- line 2
If UserJot automatically converts it to its own bullet points, it would save a lot of time.

Yeah, I think this is much needed. I'm going to add this to the roadmap.
